Zucchini Tomato Salsa

A refreshing and unique salsa to add to your go-to summer meals.

I wanted to share this delicious Zucchini Tomato Salsa I made last night. I think this will be a great go-to dish for the summer.

It's fresh with lots of crunchy bits. The taste is sweet and sour with pungent flavors. I served it on fish. It would pair well with chicken or pork as well.

Zucchini season is in full swing right now, so I had that on hand, along with homegrown tomatoes, sweet onions, and other raw vegetables.

Oh yeah, this would be considered a raw recipe, by the way -- meaning nothing is cooked. That word used to turn me off, but now I can embrace it because I now know raw can definitely equal really fresh, tasty, and so good for you.

By the way, a well stocked pantry/kitchen would include all of the ingredients listed here.  You want to get to the point where you can combine seasonal ingredients and what you have on hand to create really good food that is simple and quick.  Substituting where appropriate is allowed and encouraged.  For instance, if you only have lemon, and this calls for lime, go for it.  That's the sign of a good cook -- improvisation!

Zucchini Tomato Salsa

Makes approximately 2 cups

Ingredients:

  • 1 cup seeded, chopped tomatoes
  • 1/2 cup diced zucchini
  • 1/2 cup yellow pepper
  • 1 diced small onion
  • 1/2 lime, juiced
  • 2 tsp apple cider vinegar
  • 1 garlic clove, minced
  • 1 tsp agave nectar, optional
  • 1/2 tsp cumin
  • 1/8 tsp salt
  • 1/8 tsp pepper

Directions:

Combine all ingredients in a bowl and serve.  The flavors tend to meld together more when chilled.
